- Sharp knife
- Chopping board
- Roasting Tin
Ingredients
- 1 courgette—sliced
- 1 red onion – sliced
- 1 pepper any colour – sliced
- 2 garlic cloves – crushed or sliced
- 2 handfuls of mushrooms quartered
- Freshly ground black pepper
- 1 tablespoon olive oil or vegetable oil
- Handful baby tomatoes
Simple steps
- Heat oven to 200C/ Gas 6.
- Prepare the vegetables and spread out in roasting tin.
- Sprinkle with plenty of pepper. Drizzles with oil.
- Roast for 30– 40 mins or until vegetables are soft. Stir once halfway through cooking.
Top Tip:
- You can spice this up with some chillies or chilli powder.
- Other vegetables can be added such as carrot and parsnip, but these may take a little longer to cook
