Roasted Vegetables

Try this interesting and different way of serving vegetables. A great way to enjoy 3 portions of vegetables.

Equipment

  • Sharp knife
  • Chopping board
  • Roasting Tin

Ingredients

  • 1 courgette—sliced
  • 1 red onion – sliced
  • 1 pepper any colour – sliced
  • 2 garlic cloves – crushed or sliced
  • 2 handfuls of mushrooms quartered
  • Freshly ground black pepper
  • 1 tablespoon olive oil or vegetable oil
  • Handful baby tomatoes

Simple steps

  1. Heat oven to 200C/ Gas 6.
  2. Prepare the vegetables and spread out in roasting tin.
  3. Sprinkle with plenty of pepper. Drizzles with oil.
  4. Roast for 30– 40 mins or until vegetables are soft. Stir once halfway through cooking.

Top Tip:

  • You can spice this up with some chillies or chilli powder.
  • Other vegetables can be added such as carrot and parsnip, but these may take a little longer to cook
