Ingredients
- 100ml low fat yogurt
- 120ml lemon juice
- 1/2 tbsp vanilla extract
- zest one lemon
- 130g plain flour
- 1/2 tsp baking soda
- 100g sugar
Simple steps
- Preheat oven to 350 F.
- Line the loaf pan with greaseproof paper, and set aside
- In a bowl, whisk the lemon juice, yogurt, vanilla extract, and lemon zest
- In a separate bowl, stir together all remaining ingredients
- Pour the wet mixture into the dry mixture, and stir just until evenly mixed
- Smooth into the loaf pan, and bake 25 minutes or until loaf has risen
- Let cool and serve
