Mediterranean pitta

A fresh and tasty sandwich alternative – also great in a wrap!

  • Sharp knife
  • Chopping board
  • Grill / toaster
  • Mixing bowl
  • Mixing spoon


  • 1 wholemeal pitta bread or wrap
  • 20g houmous 
  • 5g pesto
  • 4 cherry tomatoes
  • 5 olives
  • 1/4 cucumber
  • 30g feta cheese
  • Handful of fresh parsley (optional)

Simple steps

  1. Wash and prepare the salad
  2. Halve the tomatoes and olives
  3. Slice and quarter the cucumber 
  4. Roughly chop the parsley (if using) and add all the salad into the mixing bowl
  5. Crumble the feta straight into the bowl, with the houmous and pesto and give it a good mix
  6. Grill or toast the pitta bread for a few minutes until warm
  7. Carefully slice open and fill with the mixture

Top Tip

  • If making a wrap, try spreading the houmous and pesto straight onto the wrap and then arranging the salad on top
