A fresh and tasty sandwich alternative – also great in a wrap!

Equipment
- Sharp knife
- Chopping board
- Grill / toaster
- Mixing bowl
- Mixing spoon
Ingredients
- 1 wholemeal pitta bread or wrap
- 20g houmous
- 5g pesto
- 4 cherry tomatoes
- 5 olives
- 1/4 cucumber
- 30g feta cheese
- Handful of fresh parsley (optional)
Simple steps
- Wash and prepare the salad
- Halve the tomatoes and olives
- Slice and quarter the cucumber
- Roughly chop the parsley (if using) and add all the salad into the mixing bowl
- Crumble the feta straight into the bowl, with the houmous and pesto and give it a good mix
- Grill or toast the pitta bread for a few minutes until warm
- Carefully slice open and fill with the mixture
Top Tip
- If making a wrap, try spreading the houmous and pesto straight onto the wrap and then arranging the salad on top
