Chickpea Burgers

A great veggie alternative to our homemade burgers

Equipment

  • Measuring spoons

  • Chopping board
  • Wooden spoon
  • Mixing bowl
  • Food processor
  • Frying pan
  • Fish slice

Ingredients

  • 400 g tin of chickpeas (drained)
  • Zest of 1 lemon
  • ½ lemon juiced
  • 1 tsp ground cumin
  • Handful of coriander (chopped)
  • 1 egg
  • 100 g breadcrumbs
  • 1 red onion, slice half and dice half
  • 1 tbsp olive oil

Simple steps

  1. Add the chickpeas, lemon zest and juice, cumin, egg and half the coriander into a food processor and blend until mixed together.
  2. Move the mixture into a mixing bowl and add 80g of the breadcrumbs and the diced onions
  3. Shape the mixture into 4 burger shapes and cover in the remaining breadcrumbs, chill for 10 minutes
  4. Heat the oil in the frying pan and cook the burgers for 4-5 minutes on each side over a medium heat

Try adding different herbs and spices to mix it up – smoked paprika tastes great!

Serve with wholemeal rolls and salad
