A great veggie alternative to our homemade burgers

- Fish slice
Ingredients
- 400 g tin of chickpeas (drained)
- Zest of 1 lemon
- ½ lemon juiced
- 1 tsp ground cumin
- Handful of coriander (chopped)
- 1 egg
- 100 g breadcrumbs
- 1 red onion, slice half and dice half
- 1 tbsp olive oil
Simple steps
- Add the chickpeas, lemon zest and juice, cumin, egg and half the coriander into a food processor and blend until mixed together.
- Move the mixture into a mixing bowl and add 80g of the breadcrumbs and the diced onions
- Shape the mixture into 4 burger shapes and cover in the remaining breadcrumbs, chill for 10 minutes
- Heat the oil in the frying pan and cook the burgers for 4-5 minutes on each side over a medium heat
Try adding different herbs and spices to mix it up – smoked paprika tastes great!
Serve with wholemeal rolls and salad
