Carrot and Coriander Soup

Ingredients

  • 1 medium onion
  • 150g sweet potato
  • 400g carrots
  • 20g fresh coriander or a tablespoon dried coriander
  • 400ml reduced salt vegetable stock
  • 400 ml semi skimmed milk
  • 1 x 15ml (1 tablespoon) vegetable oil
  • Ground black pepper

Simple steps

  1. Peel and finely chop the onion
  2. Peel and chop the sweet potato and carrots into 1cm chunks
  3. Wash the coriander, remove the leaves and chop the leaves finely
  4. Add the milk to the stock
  5. Cook the onions, and oil in the pan and cook until the onions are soft
  6. Add the carrots, sweet potato and stock, once soft add the coriander
  7. Blend the soup
  8. Season to taste.
