Ingredients
- 1 medium onion
- 150g sweet potato
- 400g carrots
- 20g fresh coriander or a tablespoon dried coriander
- 400ml reduced salt vegetable stock
- 400 ml semi skimmed milk
- 1 x 15ml (1 tablespoon) vegetable oil
- Ground black pepper
Simple steps
- Peel and finely chop the onion
- Peel and chop the sweet potato and carrots into 1cm chunks
- Wash the coriander, remove the leaves and chop the leaves finely
- Add the milk to the stock
- Cook the onions, and oil in the pan and cook until the onions are soft
- Add the carrots, sweet potato and stock, once soft add the coriander
- Blend the soup
- Season to taste.
