Ingredients
- 1 red pepper, deseeded and sliced
- 2.5g chilli powder
- Half small lettuce, shredded
- 1 red onion, peeled and finely sliced
- 1 clove garlic, peeled and crushed
- 2 chicken breasts, sliced thinly
- 30ml vegetable oil
- 5ml balsamic vinegar
- 400g can chopped tomatoes
- 5ml tomato puree
- 10g dried oregano
- 6 tortilla wraps
- 20g of soured cream
Simple steps
- Heat the oil in the wok and cook the chicken for 3 minutes until turned white
- Add the powdered chilli for 1 minute, then add the onion, garlic and red pepper
- Stir fry until softened and add the balsamic vinegar and cook for a few seconds
- Add the chopped tomatoes, tomato puree and oregano and cook for about 4 minutes
- Heat the tortilla wraps in the microwave according to packet instructions
- Place some of the chicken mixture into the middle of the wrap, add lettuce, soured cream and roll up
- Enjoy!
Top Tip
- This is easy to make veggie friendly using Quorn pieces instead of chicken
