Ingredients
- 2 large potatoes, cubed
- 1/2 cauliflower, cut into small florets
- 1 onion, peeled and diced
- 1 clove garlic, peeled and crushed
- 4cm root ginger, peeled and grated
- 30ml sunflower oil
- 10g ground coriander
- 10g ground cumin
- 5g turmeric
- 2.5g chilli powder
- 10g mustard seeds
- 400ml boiling water
- Juice of 1 lemon or lime
Simple steps
- Fill a large saucepan with boiling water and cook the potatoes and cauliflower for around 8 minutes
- In another pan heat the oil and add the onion, add the garlic and spices
- Drain the potato and cauliflower and add to the saucepan
- Slowly add the boiling water, waiting until thickened to the consistency you would like
- Add the lime/lemon juice just before serving.
