Ingredients

  • 200g self raising flour
  • 75g unsaturated fat spread
  • 25g caster sugar
  • 100g mixed dried fruit
  • 2g mixed spice
  • 1 large egg
  • 30ml semi-skimmed milk
  • 10g demerara sugar

Simple steps

  1. Preheat the oven to 180C / 160C fan / gas mark 4
  2. Line the baking tray with greaseproof paper
  3. Sift the flour into the mixing bowl and add the spread. Rub in with your       fingertips until it resembles breadcrumbs
  4. Add the sugar, dried fruit and mixed spice and mix
  5. Crack the egg into a small bowl, whisk with a fork, add the milk and whisk again. Pour this mixture into the dry mixture a little at a time and mix until it becomes a soft dough
  6. Divide the mixture into 12 equal rough mounds and place them on the baking tray with space between them as they will spread when they bake. Sprinkle each with a little demerara sugar
  7. Cook for 15-20 minutes until golden brown
  8. Cool on the wire rack
