Ingredients
- 200g self raising flour
- 75g unsaturated fat spread
- 25g caster sugar
- 100g mixed dried fruit
- 2g mixed spice
- 1 large egg
- 30ml semi-skimmed milk
- 10g demerara sugar
Simple steps
- Preheat the oven to 180C / 160C fan / gas mark 4
- Line the baking tray with greaseproof paper
- Sift the flour into the mixing bowl and add the spread. Rub in with your fingertips until it resembles breadcrumbs
- Add the sugar, dried fruit and mixed spice and mix
- Crack the egg into a small bowl, whisk with a fork, add the milk and whisk again. Pour this mixture into the dry mixture a little at a time and mix until it becomes a soft dough
- Divide the mixture into 12 equal rough mounds and place them on the baking tray with space between them as they will spread when they bake. Sprinkle each with a little demerara sugar
- Cook for 15-20 minutes until golden brown
- Cool on the wire rack
