Ingredients
- 1 avocado
- 1 red onion
- 10 cherry tomatoes
- 198g can sweetcorn (drained)
- 1/2 lime (for juicing)
- 1 tablespoon olive oil
- Black pepper for seasoning
Simple steps
- Slice the tomatoes in half
- Finely chop the onion
- Chop the avocado into bite-size pieces
- Add the avocado, tomatoes, onion and sweetcorn to the mixing bowl
- Drizzle over the oil and squeeze the juice from half the lime
- Add a sprinkling of black pepper and mix together
Alternative:
- Spice up the salad by sprinkling either chilli powder or smoked paprika!
